These are a hit in my house and always requested by my kids! I love that they are the perfect cooking to enjoy year around and even make a great holiday cookie too.

If you love baking homemade cookies, you've got to try my peppermint chocolate cookies, hot chocolate cookies, oatmeal raisin cookies, and these chewy chocolate chip cheesecake bars.

  • Indulgent and Decadent: Is there a cookie more divine than white chocolate and macadamia nut cookies? The caramel flavor and gooey texture are just so good!
  • Kids Love Them: Little ones love these cookies but let’s be honest, adults love them just as much, too!   
  • Easy to Freeze: You can freeze the dough and bake it later, or freeze the cookies after they’re completely cooled.

Ingredients

  • Unsalted Butter and Eggs: You’ll want both of these ingredients at room temperature to get the rich texture and buttery flavor of the perfect white chocolate chip macadamia nut cookies.
  • Granulated Sugar and Brown Sugar: Both regular granulated sugar and brown sugar are needed for this recipe to achieve the right texture and flavor. The brown sugar adds that hint of molasses and caramel taste and makes the cookies softer.
  • Vanilla Extract: Adding vanilla enhances the flavor of the cookies.
  • Baking Soda: Baking soda helps make the texture chewy – how a white chocolate macadamia nut cookie should be!
  • Salt: There’s a little salt in the recipe itself. I’ve also tried these with a sprinkle of flaked salt on top before baking and it’s so good! Leave that out if you have salted nuts, though, so the cookies aren’t too salty.
  • All-Purpose Flour: All-purpose flour has the right texture for these yummy cookies.
  • White Chocolate Chips: You’ll need two cups for this recipe. Chopped white chocolate works too, if you want chunkier pieces.
  • Macadamia Nuts: I recommend splurging on a good bag. Keep them coarsely chopped (not too fine) so you get that good crunchy texture!

Variations

  • Add Dried Cranberries: Throw some dried cranberries into the mix! It gives a little zing of tartness to this easy white chocolate cookies recipe.
  • Go Gluten-Free: You can easily substitute in gluten-free baking flour to make this recipe without gluten.
  • Mix in Milk Chocolate: Adding milk chocolate chips to the white chocolate chips gives an even chocolatier flavor! Just be sure the amount of mix-ins is about the same as what the recipe calls for, so use a little less white chocolate.

How to Make White Chocolate Macadamia Nut Cookies

To get started, preheat your oven to 350℉ and line two baking sheets with parchment paper. You’ll want to set the eggs and butter out so they are at room temperature before you start.

  1. Step 1: Combine the Wet Ingredients.  Cream together the butter, sugar, eggs, brown sugar, and vanilla extract.

  1. Step 2: Whisk Together the Dry Ingredients. Whisk the flour, salt, and baking soda together in a separate bowl.

  1. Step 3: Mix. Slowly add the flour mixture to the wet mixture and mix them well.

  1. Step 4: Stir in the Chocolate and Nuts. Now for one of the best parts! Let’s fold in the white chocolate chips and macadamia nuts and stir the dough gently until they're incorporated.

  1. Step 5: Scoop. Place spoonfuls of dough using a 2-inch cookie scoop onto the baking sheets.

  1. Step 6: Bake. Bake the cookies for 10-12 minutes, or until golden brown. Cool completely on a cooling rack before serving.

Hint - Only Bake 1 Batch at a Time!

You'll get the best possible results if you don't crowd the oven. If you do bake more than one sheet of cookies at a time, rotate the baking sheets around and from the top to bottom racks so that they brown evenly. 

Expert Tips

  • Chill the Dough: Chilling the dough for 24-72 hours will yield a thick, chewy cookie with a more developed flavor. If you have the time, it’s worth it to get the best texture!
  • Measuring the Flour: Using a digital kitchen scale to measure the flour can help you get a more accurate measurement than with standard measuring cups.
  • Keep the Butter Out of the Fridge: Keeping the butter at room temperature means that it aerates properly when you cream it together with the other ingredients. When pressed with a finger, the sticks of butter should give slightly but still hold their shape.
  • Salted vs. Unsalted Macadamia Nuts: You can decide whether you want salted or unsalted nuts for this recipe– both will work just fine. 
  • To Keep the Cookies Soft After Baking: Put a piece of bread in the cookie jar to keep them moist and fresh for longer. This tip totally works!

Storage Directions 

  • Storing: These taste best fresh but they will keep for up to 3 days in an airtight container. Cool them completely before storing. If you want that fresh-baked warm cookie feeling, pop them in the microwave for a couple seconds.
  • Freezing Raw Dough: You can freeze pre-portioned balls of dough in a freezer-safe container. Thaw them overnight in the fridge and bake as directed or bake directly from frozen with the oven at 325° F instead of 350° F and add a few extra minutes of bake time.
  • Freezing Baked Cookies: Store them properly in a freezer-safe container and store for up to 5-6 months. Let them thaw on the counter.

Ingredients
  

  • 1 cup unsalted butter room temperature
  • ¾ cup granulated sugar
  • 1 cup brown sugar
  • 2 large eggs room temperature
  • 2 tsp vanilla extract
  • 1 ½ tsp baking soda
  • 1 tsp salt
  • 3 cups all-purpose flour
  • 2 cups white chocolate chips
  • 1 cup macadamia nuts coarsely chopped

Instructions
 

  • Preheat oven to 350℉. Line two baking sheets with parchment paper and set aside.
  • Cream together butter, granulated sugar, eggs, brown sugar, and vanilla extract.
  • Whisk together flour, salt, and baking soda in a separate bowl.
  • Slowly add the flour mixture to the wet mixture and mix well.
  • Add the white chocolate chips and macadamia nuts and mix just until the ingredients are incorporated.
  • Using a two-inch cookie scoop, place the cookies on the prepared baking sheets, leaving about 2 inches between each scoop.
  • Bake for 10-12 minutes, or until the edges of the cookies turn a slight golden brown color. Remove from the oven and place the cookies on a cooling rack. Cool completely before serving. Serve and enjoy!
