Reese's Pieces are small, candy-coated peanut butter candies that were first introduced by Hershey's in 1978. They quickly gained popularity thanks to their delicious flavor and fun, colorful appearance. They were so popular that they even made an appearance in the classic '80s movie E.T.!

The addition of Reese's Pieces to the cookie dough takes these cookies to a whole new level. The candy adds a crunchy texture and a burst of peanut butter flavor that complements the soft and chewy cookie perfectly. Why Youโ€™ll Love Reese's Pieces Peanut Butter Cookies

  • The combination of soft and chewy cookie dough, loaded with peanut butter chips and Reese's Pieces candies, makes for an irresistible texture and flavor.
  • This recipe is incredibly easy to follow and doesn't require any special equipment, making it perfect for bakers of all skill levels who want to whip up a batch of delicious cookies in no time.
  • Whether you're baking these cookies for a party or just for yourself, they're sure to be a hit with anyone who loves the classic combination of peanut butter and chocolate!

Ingredients Youโ€™ll Need

  • Butter - Provides a rich and creamy flavor to the cookie dough while also helping to create a soft and tender texture.
  • Brown and White Sugar - Adds sweetness and depth of flavor to the cookies. The combination of brown sugar and white sugar also helps to create a chewy texture by adding moisture and preventing the cookies from becoming too crispy.
  • Egg - Gives structure and moisture to the cookies, helping to bind the ingredients together and helping them set while baking.
  • Vanilla Extract - Enhances the flavor of the cookies and adds a sweet, aromatic note that complements the peanut butter and chocolate flavors.
  • Baking Soda - Acts as a leavening agent, helping the cookies to rise and become fluffy.
  • Salt - Enhances the overall flavor of the cookies by bringing out the sweetness and complexity of the other ingredients.
  • All Purpose Flour - Provides structure to the cookies and helps to absorb the liquid ingredients, creating a stable dough.
  • Peanut Butter Chips - Adds a rich and nutty flavor to the cookies, complementing the peanut butter and chocolate flavors of Reese's Pieces.
  • Reese's Baking Cups & Reese's Pieces - Adds a deliciously sweet and crunchy texture to the cookies while also infusing them with the classic flavors of peanut butter and chocolate that we all know and love!

How To Make Reese's Pieces Cookies

Prepare for baking: Preheat over to 350โ„‰. Line two baking sheets with parchment paper and set aside.

Mix wet ingredients: Cream together butter and both sugars using a stand mixer. Mix egg and vanilla extract on low until blended.

Add dry ingredients: To the wet ingredients, add salt and baking soda. Gradually add in the flour and mix just until incorporated. Add peanut butter chips and Reese's mix (saving ยผ cup).

Shape and bake: Using a 2-inch cookie scoop, drop the dough onto the lined baking sheets. Leaving about 2 inches between each cookie. Bake the cookies one sheet at a time for 11-13 minutes.

Bake and cool: Remove the cookies from the baking sheet onto a cooling rack. Cool the cookies completely. Serve and Enjoy!!

Recipe Tips

  • To ensure that your cookies bake evenly, space them at least two inches apart on the baking sheet. This will give them plenty of room to spread out as they bake.
  • Make sure that your butter is at room temperature before you start making the cookie dough. This will help it to cream more easily with the sugar and create a smooth, fluffy texture.
  • To prevent your cookies from becoming too dry or tough, be careful not to overmix the dough. Mix just until the flour is incorporated and the dough comes together - any more than that, and you risk developing too much gluten, which can lead to tough cookies.
  • Let the cookies cool completely before serving. This will allow them time to set and become a perfectly soft and chewy texture.

Variations For Peanut Butter Cookies with Reese's Pieces

  • For a more indulgent treat, try sandwiching a dollop of creamy peanut butter or chocolate hazelnut spread between two cookies to make a delicious cookie sandwich.
  • Swap out the peanut butter chips for white chocolate chips or chopped macadamia nuts for a fun twist on this classic cookie recipe.
  • For a festive touch, try using holiday-themed Reese's Pieces candies or sprinkles in place of the regular Reese's Pieces. This is a great way to customize the recipe for different holidays or special occasions.
  • If you're looking for a gluten-free option, try using a gluten-free flour blend in place of the all-purpose flour. Just make sure to check the package label to ensure that it's suitable for baking before use. Also, make sure to check your other ingredients for gluten.
  • For an extra decadent treat, drizzle the baked cookies with melted chocolate or caramel sauce before serving.

Storing & Freezing

Storing: Once cooled, these cookies can be stored in an airtight container at room temperature for up to 1 week. For best results, layer the cookies between sheets of wax paper or parchment paper to prevent them from sticking together.

Freezing: Transfer the cooled cookies to a freezer-safe container or zip-top bag and freeze them for up to 3 months. To thaw, remove the desired number of cookies from the freezer and let them come to room temperature before serving.

FAQ

Can I use peanut butter instead of peanut butter chips in this recipe?

While natural peanut butter may be a tasty alternative, it's not recommended as a replacement for peanut butter chips in this recipe as the texture will make the cookies too soft and oily if not in the correct amount.

Can I use a different type of candy in place of Reese's Pieces?

Absolutely! While Reese's Pieces are a delicious addition to these cookies, you can use any type of candy that you like. Try using M&Ms, chocolate chips, or even chopped up candy bars for a fun twist on this classic recipe.

Can I make this recipe without a stand mixer?

While a stand mixer makes the process a bit easier, you can easily mix the dough by hand using a handheld electric mixer. Mix everything thoroughly to ensure that all of the ingredients are fully incorporated without overmixing the dough.
