Chocolate chip cookies are great. Cheesecake bars are great. We love them both, so we decided to combine the two into one delicious dessert. It's hard to argue with the results when all you have left is an empty pan!
This was inspired by another cookie bar recipe and our O'Henry Bars on this site and makes a great dessert after a classic meal like this meatloaf recipe, beef stroganoff, or chicken stir fry.

How To Make Chocolate Chip Cheesecake Bars

Cream the butter and wet cookie ingredients.

Mix the dry cookie ingredients.

Combine the wet and dry ingredients to create the dough and mix in the chocolate chips.

Cream the cheesecake ingredients until smooth.

Press half the cookie dough into a prepared 8x8 baking dish.

Cover the dough with the cheesecake mixture.

Top the cheesecake with the other half of the cookie dough. Bake at 325℉ for 35-40 minutes or until the top turns golden brown. Refrigerate until cooled completely, slice, and enjoy.
Hint
Be gentle when adding the top cookie dough layer to keep a nice delineation between all 3 layers.
Storage
Refrigerate these bars before serving, and store any leftovers in the refrigerator for maximum freshness. These will keep well in the freezer, too!

Chocolate Chip Cookie Cheesecake Bars

Ingredients
- 2½ cups all purpose flour
- ½ tsp baking soda
- ½ tsp salt
- ½ cup butter softened
- 2 tsp vanilla extract
- 1 cup light brown sugar
- ½ cup granulated sugar
- 2 large eggs
- 2 cups semi sweet chocolate chips
Cheesecake Layer
- 8 oz cream cheese softened
- ½ cup granulated sugar
- 2 tap vanilla extract
- 1 large egg
Instructions
- Preheat the oven to 325℉. Spray a layer of nonstick cooking spray in an 8x8-inch baking dish and set aside.
- Add granulated sugar, brown sugar, eggs, vanilla extract and softened butter to the bowl of a stand mixer. Mix until light and creams.
- In a separate bowl, mix flour, baking soda, and salt until combined.
- Slowly add the flour mixture to the wet mixture while the mixer is on low speed. Next, mix the chocolate chips until all the ingredients are well incorporated. Set aside.
- For the cheesecake layer, add cream cheese softened, egg, vanilla extract, and granulated sugar to a mixing bowl. Cream together using a handheld mixer or a stand mixer. Set aside.
- Press half of the cookie dough into the bottom of the prepared baking dish.
- Pour the cheesecake mixture evenly over the top of the cookie dough layer.
- Sprinkle the remaining dough over the top of the cheesecake layer.
- Bake for 35-40 minutes or until the top starts to turn a slight golden brown color.
- Remove the bars from the oven and place them in the refrigerator for 2-3 hours until they are cooled completely.
- Serve and ENJOY!
