- Southwest Corn: Southwest-style corn (sometimes called Mexicorn) can be found in the canned food aisle at the grocery store and contains red peppers, poblano peppers, and spices or chili to add some heat to the corn. It's not super spicy but brings in a lot of great flavor for the dish.
- Rotel diced tomatoes and green chilies: This is a bold mix of tomatoes, zesty green chilies, and spices. Look for the level of heat that works for you, whether mild or more spicy.
- Shredded Cheddar Cheese: We think this dip works best with shredded sharp cheddar but you could also use mild cheddar, Monterey Jack, or a Mexican cheese blend.
- Green Onions: Diced green onions make the perfect garnish for this dip!
- Cream Cheese: Let the cream cheese sit out for a bit so it's softened.
- Sour Cream: Paired with the cream cheese, the sour cream makes the dish even creamier and gives that little hint of tanginess.
- Garlic Powder, Salt, and Pepper: These spices add a ton of flavor to make this dip live up to its name.
- Cilantro: We love chopped cilantro mixed into this dip to give it the Tex-Mex flavor, but if you're not a fan, you can leave it out or substitute fresh parsley or scallions instead.

- Add More Spices: If you love spicy food, consider adding a little onion powder, a dash of smoked paprika, and finely diced jalapenos to this creamy corn dip.
- Meaty Twist: Add diced ham or crumbled bacon to give corn crack dip some hearty protein and even more great flavor.
- Already Gluten-Free: This recipe is already gluten-free, so if you’re serving someone with gluten sensitivities just be sure to include a gluten-free chip or cracker option.

How to Make Crack Corn Dip
One of the best parts about this creamy corn dip recipe is that you can whip it up in ten minutes. Seriously, it’s so easy!
- Step 1: Mix Everything. Drain the cans of corn and tomatoes, then you're going to put all of the ingredients in a bowl and stir them until well combined.
- Step 2: Refrigerate. Let it chill in the fridge for at least 2 hours (overnight works great too). Serve with your favorite dippers and watch it disappear!
Hint: Can't Find Southwest Corn?
If you can't find a can of southwest corn, don't worry. Just use a can of regular sweet corn and add in ¼ cup chopped roasted bell peppers. You could also use raw bell pepper, but we think they’re better when cooked.
Expert Tips
- Storing: This dip is best served fresh but will keep in the fridge in an airtight container for up to 4 days. Keep in mind the longer it sits, the more the cheese will soak up any excess liquid so you might stir in a spoonful of sour cream when you serve the leftovers.
- To Avoid Having a Watery Dip: Drain and rinse the cans of corn and be sure to drain the tomatoes, too.
- Hot Sauce on the Side: When we have friends or family who love spicy food around, we'll sometimes serve this dip and set out some hot sauce or cayenne pepper next to the bowl. Then they can add heat to match their spice level preference!
- For a Hot Version: If you prefer a melty, bubbly, cheesy dip, you can also layer extra cheese on the top and broil this dip in the oven for a few minutes. Garnish with cilantro after it’s done cooking.

This is a fun dip to serve a number of different ways. You can bring creamy corn dip to a potluck, game day, picnic, or party any time of year and it's sure to be a hit. We even served it once at a holiday gathering just for something different and there were no leftovers in sight.

- 2 (15.25 ounce) cans southwest corn drained
- 10 ounces Rotel diced tomatoes and green chilies
- 2 cups cheddar cheese shredded
- 8 green onions diced
- 8 ounces cream cheese softened
- 1 cup sour cream
- 1 teaspoon black pepper
- ½ teaspoon garlic powder
- ½ teaspoon salt
- ⅓ cup cilantro chopped
Instructions
- Add all the ingredients to a large bowl and mix until well combined.
- Refrigerate for a minimum of 2 hours or overnight. Serve with your favorite tortilla chips, and enjoy!
Notes
- This dip keeps in the fridge for 4 days. If the leftovers seem dry, add a little sour cream to it when you serve it the second time around.
- Be sure to drain and rinse the corn and drain the tomatoes so there's no excess liquid in the dip.
- For a warm version, top with extra cheese and broil it in the oven.
