- Comforting: This quintessential comfort food is perfect for cold days when you crave something warm and nourishing.
- Customizable: This soup is incredibly versatile, allowing you to customize it to your taste preference and dietary needs. No matter how you prefer it, having a recipe you can alter makes it easier to make it just the way your family likes it!
Ingredients
- Meat: It all begins with beef! For this recipe for vegetable soup with beef, you will need stew meat, which comes out so tender and juicy when cooked slowly. You can also use chuck roast, brisket or round cuts and dice it up.
- Vegetables: A mix of celery, onion, and potatoes creates a flavorful base, while diced tomatoes and a frozen mix of corn, green beans, peas, and carrots add color and texture.
- Beef Broth: Adds depth to the stew meat and ties all the flavors of the soup together. No beef broth? Swap in chicken or vegetable broth, though the flavor will be a bit lighter.
- Worcestershire Sauce: Gives a savory, umami-rich kick that helps to balance the sweetness of the tomatoes. Soy sauce or coconut aminos are great options in a pinch!
- Tomato Soup: This simple pantry staple gives the broth a bit of sweetness. Swap it for tomato sauce for a more tomato forward flavor.
- Tomato Paste: This addition is key to thickening the soup and complimenting the other ingredients with richness and earthy sweetness.
- Herbs, Oils & Seasoning: Olive oil kicks things off by helping the onion and celery soften and release their natural juices. Sprinkle in Italian seasoning, salt, pepper, garlic, and bay leaves to infuse the soup with warm aromatics.
See the recipe card below for exact ingredient amounts, nutritional information, and detailed instructions.
Variations
- Protein Swap: For a leaner option, shredded turkey or chicken work great, and lentils or beans are a solid vegetarian pick. Just match your broth to your protein choice for the best results.
- Budget-Friendly: Use ground beef for a more affordable option that still delivers a similar rich, beefy flavor.
- Grains & Legumes: Adding some cooked lentils, barley, beans, or quinoa not only adds a new texture to this beef vegetable soup, they introduce more fiber and protein content.
How to Make Vegetable Beef Soup
Grab your large pot and let this vegetable soup with beef simmer away in your kitchen!
Step 1: Sear the Meat. Season the stew meat and then sear it in a pot with a tablespoon of olive oil over medium-high heat for 4 minutes on each side. Remove the beef from the pan and set aside.
Step 2: Build the Base. Add another tablespoon of olive oil, along with the celery and onions, and cook for 5 minutes or until tender and translucent.
Step 3: Make the Soup. Add back the cooked beef, along with the potatoes, tomato soup, beef broth, diced tomatoes, garlic, Worcestershire sauce, Italian seasoning, pepper, salt and bay leaves.
Step 4: Simmer Away. Bring all the ingredients to a boil, then move the burner to low heat, cover and simmer for 30 minutes, stirring occasionally.
Step 5: Add the Frozen Veggies. Pour in the frozen veggies, cover and simmer the soup for another 20 minutes.
Step 6: Stir and Serve. Stir the soup in the pot before ladling into individual bowls and enjoy!
Hint: Deglaze Your Pan
After browning the meat in the pan, deglaze the pan with a splash of red wine, beer or beef stock before adding the rest of the liquids. It’s an easy way to pack in extra flavor!
Expert Tips
- Broth Quality: Using a high-quality broth really takes this soup from good to great. If homemade isn't available, go for a low-sodium broth for the best flavor.
- Sauté Slowly: Don't rush the onions and celery! Let them cook slowly to bring out their natural sweetness, adding depth and complexity to your broth.
- Taste as You Go: Adjust the seasoning toward the end of cooking. You can even get creative with some lemon juice or vinegar to brighten the dish, or try smoked paprika or cumin for warmth.
