Why You'll Love This Recipe

  • Quick and easy: Get dinner on the table in just 30 minutes with minimal cleanup.
  • Flavor-packed: Smoky spices and fresh ingredients bring a bold, authentic taste.
  • Family-friendly: These baked chicken fajitas are a versatile meal that everyone will love, from kids to adults.
  • Customizable: Serve with a variety of toppings and tortillas to suit everyone's taste.

Ingredients

  • Chicken Breast: Provides lean protein and absorbs all the flavors from the seasoning. For the best texture, slice against the grain into thin strips.
  • Bell Peppers: Add vibrant color, a mild sweetness, and crunch. Use a mix of red, yellow, and green for the most flavor and visual appeal. Pick firm, shiny peppers with no soft spots.
  • Onion: Adds a subtle sweetness as it caramelizes during cooking. Choose medium-sized onions that are firm to the touch. Yellow onions work best for this dish.
  • Garlic: Delivers a savory kick to the fajita seasoning and marinade. Fresh garlic cloves are best for flavor.
  • Lime Juice: Helps tenderize the chicken while adding a fresh burst of acidity. Use fresh lime for the best flavor.
  • Olive Oil: Coats the chicken and vegetables, helping the seasoning stick and creating a rich texture when baked.
  • Cilantro: Adds a fresh, herbal note to balance the spices. Choose fresh cilantro with bright green leaves.
  • Flour Tortillas: Soft tortillas that wrap the fajita filling. Warm them in the oven to soften.
  • Fajita Seasoning: A homemade blend of chili powder, cumin, paprika, and other spices that gives the dish its signature bold taste. You can store any leftover seasoning for future recipes.

See the recipe card below for exact ingredient amounts, nutritional information, and detailed instructions.

Variations

  • BBQ Fajitas: Swap the fajita seasoning for a smoky BBQ rub and drizzle with your favorite BBQ sauce for a sweet and smoky flavor.
  • Veggie-Only Fajitas: For a vegetarian or vegan version, skip the chicken and use a mix of extra vegetables like zucchini, mushrooms, and cauliflower. These veggies roast beautifully and soak up the seasoning just as well.
  • Swap the Protein: Instead of chicken breast, try using thinly sliced steak, shrimp, or tofu for a different protein option.
  • Spicy Kick: Add some heat by including sliced jalapenos or a dash of cayenne pepper to the seasoning mix. You can also use a spicy salsa or hot sauce as a topping for extra heat.
  • Sweet Twist: Add a touch of sweetness by tossing in sliced pineapple or mango with the peppers and onions. This will balance the heat and create a fun, tropical flavor.

How to Make Sheet Pan Chicken Fajitas

Making these sheet pan chicken fajitas is quick and simple! With just a few easy steps, you'll have a delicious meal in no time. Start by preheating your oven to 400° and prepping your baking sheet.

  1. Step 1: Mix the Fajita Seasoning. Stir together all the fajita seasoning ingredients in a small bowl.
  2. Step 2: Assemble Everything in the Pan. Lay the sliced bell peppers and onions on the prepared sheet pan and place the sliced chicken on top. Sprinkle the fajita seasoning over everything, followed by the minced garlic and olive oil.
  3. Step 3: Bake. Place the sheet pan in the oven and bake for 18-25 minutes, or until the chicken reaches an internal temperature of 165°. The veggies should be tender and slightly caramelized.
  4. Step 4: Warm the Tortillas & Serve. Wrap the tortillas in foil and place them in the oven during the last 5 minutes of cooking time. Once the oven-baked fajitas are done, squeeze fresh lime juice over the top and garnish with cilantro before serving in the warm tortillas.

Hint: Slice Veggies Evenly

Cut bell peppers and onions into similar-sized strips so they cook at the same rate. This helps prevent undercooked or overly soft vegetables.

Expert Tips

  • Marinate for Extra Flavor: For deeper flavor, marinate the chicken in lime juice and the fajita seasoning for 30 minutes before baking. This will infuse the chicken with more of those bold, zesty flavors.
  • Don't Overcrowd the Pan: You want everything to cook evenly, so avoid overcrowding the pan. If necessary, use two sheet pans to give the chicken and veggies enough space for optimal roasting.
  • Check the Chicken's Internal Temperature: To ensure the chicken is fully cooked, use an instant-read thermometer to check that it reaches an internal temperature of 165°F.
  • Make Ahead for Meal Prep: To save time, you can prepare the fajita seasoning and slice the chicken and vegetables a day ahead. Store them separately in the fridge, and just assemble and bake when ready to cook.

Serving Suggestions

This sheet pan fajita recipe is versatile, flavorful, and easy to round out with your favorite sides for a satisfying meal.

  • Pair these fajitas with our creamy corn dip or salsa just like a restaurant and chips for a refreshing and tangy side dish that balances the bold flavors of the fajitas.
  • Make for a quick weeknight dinner with this traditional Mexican rice, a meal the whole family will love.
  • Serve with homemade pico de gallo to add freshness and color to the table.

Storage Directions

  • Storing: Leftover one-pan fajitas can be stored in an airtight container in the refrigerator for up to 4 days. Store the tortillas separately to prevent them from becoming soggy. You can freeze cooked chicken fajitas in a freezer-safe container or bag for up to 3 months.
  • Reheating: For best results, reheat the fajita filling in a skillet over medium heat with a splash of water or chicken broth to keep it moist. You can also use the microwave in 30-second intervals.
