How To Make Chicken Fajitas On A Sheet Pan

Prepare for baking: Preheat oven to 400° and spray a sheet pan with nonstick cooking spray.

Assemble in the pan: Once the vegetables and chicken are cut into strips, lay the bell peppers and onions on the sheet pan, followed by the chicken strips on top. Sprinkle the fajita seasoning over the top as well as the garlic and olive oil.

Ingredients
  

  • 2 lbs boneless, skinless chicken breasts (sliced against the grain into ½-inch thick
  • 3 bell peppers (1 green, 1 yellow, 1 red & sliced)
  • 1 yellow onion (sliced)
  • 3 tbsp garlic (minced)
  • 3 tbsp olive oil
  • 3 tbsp cilantro (chopped)
  • 1 lime
  • 12 small flour tortillas

Fajita Seasoning

  • 1 tbsp chili powder
  • 1 tsp paprika
  • ½ tsp cumin
  • ½ tsp onion powder
  • ½ tsp garlic powder
  • ¼ tsp dried oregano
  • ¼ tsp cayenne pepper
  • ½ tsp salt
  • ½ tsp black pepper
  • ½ tsp granulated sugar

Instructions
 

  • Preheat oven to 400° and spray a sheet pan with nonstick cooking spray.
  • Add fajita seasoning ingredients to a small bowl. Whisk until well combined and set aside.
  • Lay sliced bell peppers and onions on the sheet pan. Then, place the chicken on top of the vegetables and sprinkle the prepared seasoning over the top. Sprinkle the garlic and olive oil over everything.
  • Bake for 18-25 minutes or until the chicken reaches an internal temperature of 165°. Wrap the tortillas in foil and warm them in the oven for the last 5 minutes of cooking time.
  • Remove from oven and squeeze fresh lime juice over the top and garnish with fresh cilantro. Serve in warmed tortillas with your favorite toppings.
