Ingredients
  

  • 1 cup margarine room temperature
  • 1 cup brown sugar
  • 1 cup granulated sugar
  • 2 eggs
  • 1 teaspoon vanilla extract
  • 1 tablespoon hot water
  • 2 teaspoons baking soda
  • ¾ teaspoon salt
  • 1½ teaspoons baking powder
  • 2 cups flour
  • 2 cups oatmeal
  • 1 cup coconut flakes
  • 2 cups semi-sweet chocolate chips

Instructions
 

  • Preheat your oven to 350℉-line 2 baking sheets with parchment paper and set aside.
  • In the bowl of your stand mixer, cream together margarine, brown sugar, granulated sugar, eggs, hot water, and vanilla extract.
  • Next, add baking soda, baking powder, and salt. Mix until all the ingredients are well incorporated.
  • Add the oatmeal, coconut, and flour and mix well. Slowly fold in the chocolate chips, being careful not to over-mix.
  • Place the dough on the baking sheet using a two-inch cookie scoop, leaving 2½ inches between each cookie.
  • Bake for 12-15 minutes or until the cookies start to turn a slight golden brown color. Leave the cookies on the baking sheet to cool for 5 minutes before placing them on a cooling rack.
