- 1 cup margarine room temperature
- 1 cup brown sugar
- 1 cup granulated sugar
- 2 eggs
- 1 teaspoon vanilla extract
- 1 tablespoon hot water
- 2 teaspoons baking soda
- ¾ teaspoon salt
- 1½ teaspoons baking powder
- 2 cups flour
- 2 cups oatmeal
- 1 cup coconut flakes
- 2 cups semi-sweet chocolate chips
Preheat your oven to 350℉—line 2 baking sheets with parchment paper and set aside.
In the bowl of your stand mixer, cream together margarine, brown sugar, granulated sugar, eggs, hot water, and vanilla extract.
Next, add baking soda, baking powder, and salt. Mix until all the ingredients are well incorporated.
Add the oatmeal, coconut, and flour and mix well. Slowly fold in the chocolate chips, being careful not to over-mix.
Place the dough on the baking sheet using a two-inch cookie scoop, leaving 2½ inches between each cookie.
Bake for 12-15 minutes or until the cookies start to turn a slight golden brown color. Leave the cookies on the baking sheet to cool for 5 minutes before placing them on a cooling rack.
