  • Chicken: I use boneless, skinless chicken breasts which require zero prep. Be careful not to overcook, as white meat can dry out. You can also use boneless and skinless chicken thighs too.
  • Seasoning: Black pepper, paprika, salt, and dried thyme give the dish warmth and smoky, savory flavors.
  • Oil & Butter: Olive oil browns the chicken, while butter adds richness to the onions and garlic.
  • Aromatics: Onion and garlic infuse both the gravy and chicken with bold, savory flavor. 
  • Flour: Thickens the gravy, adding a smooth velvety texture.
  • Broth: The chicken broth, along with the aromatics, creates a rich base for simmering the ingredients.
  • Worcestershire Sauce: A touch of Worcestershire adds a deep umami and more complex flavor to the Chicken breast and gravy.

How to Make Chicken and Gravy

  1. Step 1: Prep the Chicken. Cut the boneless, skinless chicken breasts in half lengthwise and season both sides with black pepper, paprika, salt and thyme.

  1. Step 2: Brown the Chicken. Cook the chicken with oil in a preheated skillet for 4-5 minutes on each side. Remove from the pan and set aside.

  1. Step 3: Sauté the Aromatics. In the same skillet, melt the butter and sauté the onions and garlic for 5-7 minutes until soft.

  1. Step 4: Make the Gravy. Whisk in the flour until well combined.  Then, slowly add in the chicken broth and Worcestershire sauce, continuing to stir until the gravy thickens and bubbles in the pan.

Ingredients
  

  • 1½ pounds boneless, skinless chicken breasts
  • ½ teaspoon black pepper
  • ½ teaspoon paprika
  • ½ teaspoon salt
  • ¼ teaspoon dried thyme
  • 2 tablespoons olive oil
  • ¼ cup unsalted butter
  • 1 cup yellow onion diced
  • 3 teaspoon garlic minced
  • ¼ cup flour
  • 2 cups chicken broth
  • 1 teaspoon Worcestershire sauce

Instructions
 

  • Cut chicken breast in half lengthwise and season both sides with black pepper, paprika, salt, and thyme.
  • Heat oil in a large skillet over medium-high heat. Cook the chicken on each side for 4-5 minutes. Remove and set aside.
  • Melt butter, then add onion and garlic. Cook for 5-7 minutes or until soft.
  • Whisk in flour until coated. Then, slowly whisk in chicken broth and Worcestershire sauce. Continue to stir until gravy starts to thicken and bubble.
  • Lower heat to medium, add the chicken back in, and simmer for 5-6 minutes.
  • Serve over mashed potatoes and rice.
