Chocolate Chip Cookie Cheesecake Bars

Chocolate chip cookie cheesecake bars combine the best of two delicious worlds into one delicious dessert everyone will love. A chocolate chip cookie base is covered in a layer of rich cheesecake and then baked to perfection.

Ingredients

  • cups all purpose flour
  • ½ tsp baking soda
  • ½ tsp salt
  • ½ cup butter softened
  • 2 tsp vanilla extract
  • 1 cup light brown sugar
  • ½ cup granulated sugar
  • 2 large eggs
  • 2 cups semi sweet chocolate chips

Cheesecake Layer

  • 8 oz cream cheese softened
  • ½ cup granulated sugar
  • 2 tap vanilla extract
  • 1 large egg

Instructions

  • Preheat the oven to 325℉. Spray a layer of nonstick cooking spray in an 8x8-inch baking dish and set aside.
  • Add granulated sugar, brown sugar, eggs, vanilla extract and softened butter to the bowl of a stand mixer. Mix until light and creams.
  • In a separate bowl, mix flour, baking soda, and salt until combined.
  • Slowly add the flour mixture to the wet mixture while the mixer is on low speed. Next, mix the chocolate chips until all the ingredients are well incorporated. Set aside.
  • For the cheesecake layer, add cream cheese softened, egg, vanilla extract, and granulated sugar to a mixing bowl. Cream together using a handheld mixer or a stand mixer. Set aside.
  • Press half of the cookie dough into the bottom of the prepared baking dish.
  • Pour the cheesecake mixture evenly over the top of the cookie dough layer.
  • Sprinkle the remaining dough over the top of the cheesecake layer.
  • Bake for 35-40 minutes or until the top starts to turn a slight golden brown color.
  • Remove the bars from the oven and place them in the refrigerator for 2-3 hours until they are cooled completely.
  • Serve and ENJOY!

Notes

    • Use an even layer of non-stick spray on your pan, but don't use so much that it pools.
    • Mix the cheesecake batter until smooth, but don't overmix it.
    • Be gentle when adding the top cookie dough layer to keep a nice delineation between all 3 layers.
    • Chill the bars for a minimum of 2 to 3 hours. Overnight is better!
