- Preheat the oven to 325℉. Spray a layer of nonstick cooking spray in an 8x8-inch baking dish and set aside.  
- Add granulated sugar, brown sugar, eggs, vanilla extract and softened butter to the bowl of a stand mixer. Mix until light and creams.  
- In a separate bowl, mix flour, baking soda, and salt until combined.  
- Slowly add the flour mixture to the wet mixture while the mixer is on low speed. Next, mix the chocolate chips until all the ingredients are well incorporated. Set aside.  
- For the cheesecake layer, add cream cheese softened, egg, vanilla extract, and granulated sugar to a mixing bowl. Cream together using a handheld mixer or a stand mixer. Set aside.  
- Press half of the cookie dough into the bottom of the prepared baking dish.  
- Pour the cheesecake mixture evenly over the top of the cookie dough layer.  
- Sprinkle the remaining dough over the top of the cheesecake layer.  
- Bake for 35-40 minutes or until the top starts to turn a slight golden brown color.  
- Remove the bars from the oven and place them in the refrigerator for 2-3 hours until they are cooled completely.
