Preheat the oven to 325℉. Spray a layer of nonstick cooking spray in an 8x8-inch baking dish and set aside.
Add granulated sugar, brown sugar, eggs, vanilla extract and softened butter to the bowl of a stand mixer. Mix until light and creams.
In a separate bowl, mix flour, baking soda, and salt until combined.
Slowly add the flour mixture to the wet mixture while the mixer is on low speed. Next, mix the chocolate chips until all the ingredients are well incorporated. Set aside.
For the cheesecake layer, add cream cheese softened, egg, vanilla extract, and granulated sugar to a mixing bowl. Cream together using a handheld mixer or a stand mixer. Set aside.
Press half of the cookie dough into the bottom of the prepared baking dish.
Pour the cheesecake mixture evenly over the top of the cookie dough layer.
Sprinkle the remaining dough over the top of the cheesecake layer.
Bake for 35-40 minutes or until the top starts to turn a slight golden brown color.
Remove the bars from the oven and place them in the refrigerator for 2-3 hours until they are cooled completely.
