Taco Pie

Seasoned ground beef, sautéed with onions and peppers, is layered with refried beans, salsa, and cheese, and then topped with your favorite taco fixings in this tasty Taco Pie. Using store-bought biscuit dough as the crust, this hearty meal will be on the table in just 30 minutes.

Ingredients

  • 1 pound ground beef
  • 1 (1.5 ounce) packet of taco seasoning
  • ½ cup yellow onion diced
  • ¼ cup red bell pepper finely diced
  • 1 can refrigerated biscuit dough
  • 1 (16 ounce) refried beans
  • ½ cup salsa
  • cups cheddar cheese shredded
  • 1 cup sour cream
  • ½ cup tomatoes diced
  • 4 green onions

Instructions

  • Preheat oven to 400°F. Spray a 9" pie dish with a non-stick cooking spray.
  • In a large skillet over medium-high heat. Add ground beef, onions and red bell peppers. Cook until beef is browned and vegetables are tender. Then, mix in taco seasoning and mix until well coated.
  • Place the biscuit dough in the bottom of a baking dish and flatten out to form a crust.
  • In a medium bowl mix the refried beans and salsa together until well combined. spread over the over the biscuit dough.
  • Pour the meat mixture over the top and spread out evenly.
  • Top with shredded cheese.
  • Bake for 20 minutes or until the cheese is completely melted.
  • Remove from oven and let cool for 5 minutes. Top with sour cream, tomatoes and green onions when serving.

Notes

  • Pinch the dough: When pressing the dough into the pie plate, make sure to pinch any seams together so the dough doesn’t come apart when you bake it.
  • Storage: Place any leftovers in an airtight container and store in the refrigerator for 3-4 days. Reheat in the oven so the dough stays crisp. You can also freeze leftovers for up to 3 months. Thaw in the fridge overnight and reheat in the oven. 
  • Watch for burning: Make sure the exposed crust doesn’t get too dark or start to burn. If it is getting dark, cover the pie with aluminum foil until it is done baking.
