- 1 ½ pounds stew meat
- 2 tablespoons olive oil
- 1 teaspoon black pepper
- ½ teaspoon salt
- 2 ribs celery chopped
- 1 medium yellow onion diced
- 4 cups beef broth
- 4 medium Yukon gold potatoes washed and cut into ¾" pieces
- 10 ounce can of condensed tomato soup
- 1 tablespoon tomato paste
- 2 (14.5 ounce0 cans fire roasted diced tomatoes
- 2 tablespoons garlic minced
- 1 tablespoon Worcestershire sauce
- 1½ tablespoons Italian seasoning
- 1 teaspoon black pepper
- 1 teaspoon paprika
- ½ teaspoon salt
- 2 bay leaves
- 16 ounce bag of frozen mixed vegetables
In a large pot over medium-high heat, add 1 tablespoon of oil.
Season stew meat with 1 teaspoon of black pepper and ½ teaspoon of salt. Sear the beef on each side for 4 minutes. Then, remove and set aside.
Add 1 tablespoon of olive oil, celery, and onions. Cook for 5 minutes or until tender.
Add cooked beef, potatoes, tomato soup, tomato paste, diced tomatoes, garlic, Worcestershire sauce, Italian seasoning, black pepper, salt, and bay leaves.
Bring to a boil, lower heat to low, and cover; simmer for 30 minutes stirring occasionally.
Add in frozen mixed vegetables and simmer for 20 minutes.
