Lucky Charms Rice Krispie Treats

Lucky Charms Treats have buttery, gooey marshmallows combined with Lucky Charms cereal instead of traditional Rice Krispies. The colorful, crunchy marshmallows and sweet vanilla flavor are addictive and so satisfying to eat.

Ingredients

  • ½ cup butter
  • 1 tsp vanilla
  • 10 oz mini marshmallows
  • 7 cups Lucky Charms

Instructions

  • Spray a 9x9 pan with cooking spray and set aside.
  • In a large microwave-safe bowl, melt butter. Stir in mini marshmallows and microwave for 30 seconds at a time, stirring in between until completely melted.
  • Stir in vanilla extract. Slowly add in the Lucky Charms and stir until completely covered in the marshmallow mixture.
  • Pour the mixture into the pan. Spray your clean hands with a little cooking spray and press the mixture evenly in the pan.
  • Let the treats set for 30 minutes. Serve and enjoy!

Notes

  • Melt the marshmallows just until smooth. Overheating them can make them too tough.
  • Work quickly once the marshmallows are melted as the mixture sets rapidly.
  • Lightly spray your hands with cooking spray before pressing the mixture into the pan.
  • Pat the mixture into the pan gently. Compacting too firmly can make the treats too dense.
  • Cut them about 30 minutes after assembling.
  • Store with parchment paper between layers to prevent them from sticking together.
