- 1 lb mild Italian Sausage
- 1 lb lean ground beef
- 1 medium yellow onion (diced)
- 3 teaspoons garlic (minced)
- 1 ½ teaspoons Italian seasoning
- 1 teaspoon ground black pepper
- 1 teaspoon salt
- ⅓ cup tomato paste
- 6 cups chicken broth
- 2 (14.5 oz) cans of diced tomatoes
- 8 lasagna noodles (broken into bite size pieces)
Cheese Topping
- 8 oz ricotta cheese
- 1 cup mozzarella cheese (Shredded)
- ½ cup parmesan cheese (finely shredded)
In a large pot over medium-high heat. Add sausage, ground beef, onion, garlic, Italian seasoning, black pepper, and salt. Stirring occasionally until meat is browned and onions are soft.
Add tomato paste, chicken broth, and diced tomatoes. Stir until well combined.
Bring to a boil, then reduce heat to medium-low, cover and simmer 15 minutes. Then remove lid and add noodles. Cook for 8-10 minutes or until noodles are soft.
Meanwhile in a medium mixing bowl, add ricotta cheese, mozzarella cheese, and Parmesan cheese. Mix together with a fork.
Add soup to bowls and generously top with cheese mixture. Enjoy!
