Easy Lasagna Soup

Ingredients

Soup

  • 1 lb mild Italian Sausage
  • 1 lb lean ground beef
  • 1 medium yellow onion (diced)
  • 3 teaspoons garlic (minced)
  • 1 ½ teaspoons Italian seasoning
  • 1 teaspoon ground black pepper
  • 1 teaspoon salt
  • cup tomato paste
  • 6 cups chicken broth
  • 2 (14.5 oz) cans of diced tomatoes
  • 8 lasagna noodles (broken into bite size pieces)

Cheese Topping

  • 8 oz ricotta cheese
  • 1 cup mozzarella cheese (Shredded)
  • ½ cup parmesan cheese (finely shredded)

Instructions

  • In a large pot over medium-high heat. Add sausage, ground beef, onion, garlic, Italian seasoning, black pepper, and salt. Stirring occasionally until meat is browned and onions are soft.
  • Add tomato paste, chicken broth, and diced tomatoes. Stir until well combined.
  • Bring to a boil, then reduce heat to medium-low, cover and simmer 15 minutes. Then remove lid and add noodles. Cook for 8-10 minutes or until noodles are soft.
  • Meanwhile in a medium mixing bowl, add ricotta cheese, mozzarella cheese, and Parmesan cheese. Mix together with a fork.
  • Add soup to bowls and generously top with cheese mixture. Enjoy!

Notes

  • Brown the meat and sauté the onions and garlic for maximum flavor.
  • Add the noodles toward the end to prevent them from becoming mushy.
  • Stir in the cheese mixture just before serving for a creamy topping.
  • Simmer the soup uncovered after adding noodles to reach the perfect consistency.
