Ingredients

  • 1 pounds ground beef
  • 4 tablespoons butter (divided 1 tbsp & 3 tbsp)
  • ¾ cup yellow onion (diced)
  • ¾ cup carrots (shredded)
  • ¾ cup celery (diced)
  • 2 teaspoons Italian seasoning
  • ½ teaspoon salt
  • 1 teaspoon ground black pepper
  • 2 pounds petite red potatoes (quartered)
  • 4 cups chicken broth
  • ¼ cup all-purpose flour
  • 1 ½ cups milk
  • 3 cups sharp cheddar cheese (shredded)
  • cup sour cream

Instructions

  • Over medium-high heat in a large stock pot. Add ground beef, cook and crumble until browned. Drain and set aside.
  • In the same pot, add 1 tbsp of butter and onions, carrots, celery, Italian seasoning, salt, and black pepper. Saute until vegetables are tender.
  • Add beef, potatoes, and chicken broth to the pot and bring to a boil. Reduce heat, cover, and simmer for 10-12 minutes or until potatoes are tender.
  • In a small skillet over medium heat, add 3 tbsp butter and flour; cook and stir for 3-5 minutes or until bubbly. Add to the soup and turn the heat to medium-high. Bring to a boil, then reduce heat to low.
  • Stir in cheese and milk; cook until cheese melts. Turn off the heat and stir in sour cream.
  • Garnish with green onions, and enjoy!

Notes

  • Make sure to drain the cooked beef well to keep the soup rich without being greasy.
  • Melt the cheese slowly over low heat to ensure a smooth, creamy texture.
  • Stir the roux in gradually to prevent lumps from forming.
