- 1 pounds ground beef
- 4 tablespoons butter (divided 1 tbsp & 3 tbsp)
- ¾ cup yellow onion (diced)
- ¾ cup carrots (shredded)
- ¾ cup celery (diced)
- 2 teaspoons Italian seasoning
- ½ teaspoon salt
- 1 teaspoon ground black pepper
- 2 pounds petite red potatoes (quartered)
- 4 cups chicken broth
- ¼ cup all-purpose flour
- 1 ½ cups milk
- 3 cups sharp cheddar cheese (shredded)
- ⅓ cup sour cream
Over medium-high heat in a large stock pot. Add ground beef, cook and crumble until browned. Drain and set aside.
In the same pot, add 1 tbsp of butter and onions, carrots, celery, Italian seasoning, salt, and black pepper. Saute until vegetables are tender.
Add beef, potatoes, and chicken broth to the pot and bring to a boil. Reduce heat, cover, and simmer for 10-12 minutes or until potatoes are tender.
In a small skillet over medium heat, add 3 tbsp butter and flour; cook and stir for 3-5 minutes or until bubbly. Add to the soup and turn the heat to medium-high. Bring to a boil, then reduce heat to low.
Stir in cheese and milk; cook until cheese melts. Turn off the heat and stir in sour cream.
Garnish with green onions, and enjoy!
