Tater Tot Sloppy Joe Casserole

Ingredients

  • 1 pound ground beef
  • cup green bell pepper seeded and diced
  • ½ cup yellow onion diced
  • 2 teaspoons garlic minced
  • 8 ounces tomato sauce
  • ¾ cup ketchup
  • 1 tablespoon brown sugar
  • 1 ½ tablespoons yellow mustard
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon ground black pepper
  • ¼ teaspoon chili powder
  • ½ teaspoon salt
  • ½ teaspoon onion powder
  • ½ teaspoon paprika
  • 2 cups Colby Jack cheese shredded
  • 28 ounces bag of frozen tater tots

Instructions

  • Preheat the oven to 425℉.
  • In a large oven-safe skillet over medium-high heat, add the ground beef to the skillet. Cook for 6-8 minutes or until browned, breaking up the ground beef with a spatula.
  • Add onions and green peppers and cook for 4-5 minutes or until they become soft.
  • Add garlic, tomato sauce, ketchup, brown sugar, mustard, Worcestershire sauce, black pepper, salt, onion powder, and paprika. Stir until combined and simmer uncovered, stirring occasionally for 6-8 minutes or until the sauce thickens.
  • Stir in 1 cup of cheese into the sloppy joe mixture. Then, sprinkle the remaining cheese over the top.
  • Top with the tater tots and bake for 30-35 minutes or until the tater tots reach your desired crispiness.
  • Server while hot and enjoy!

Notes

  • Bake it later: Prepare the ingredients and store them in the refrigerator so you have them ready to bake later.
  • Add garnishes: Finish the baked Sloppy Joe casserole with chopped green onions and sour cream for color.
  • Don’t overcook the sauce: Do not cook the sauce too much on the stovetop so it doesn’t over-reduce.
  • Use a casserole dish: If you don’t have an oven-proof skillet, you may transfer the Sloppy Joe mixture to a 9x13 casserole dish before you add the tots.
