Quesadillas
- 6 large flour tortillas
- 1 medium green pepper cored and sliced
- 1 medium yellow onion sliced
- 6 ounces brown mushrooms sliced
- 2 teaspoons garlic minced
- 2 cups shredded Monterey Jack cheese
- 2 tablespoons butter
Add black pepper, salt, paprika, onion powder, and Italian seasoning in a small bowl. Mix until combined, and coat the sliced steak in the seasonings.
Heat oil in a large skillet over medium-high heat. Add the steak and cook for 2-3 minutes on each side, or until cooked to your preference. Remove and add to a plate. Cover with aluminum foil and set aside.
Add green peppers, onion, mushrooms, and garlic to the skillet. Saute for 7-8 minutes, stirring occasionally, or until vegetables are tender.
Assemble the quesadilla by evenly dividing the cheese, steak, and vegetables on the tortillas. Then, fold them in half.
In batches, cooking two at a time, add ½ tablespoon of butter to the skillet over medium-high heat and two quesadillas. Cook for 2-3 minutes on each side until golden brown and the cheese is melted. Repeat until everything is cooked.
Serve with your favorite toppings and dips. Enjoy!
- Don’t overstuff the quesadilla. Add just enough of the filling ingredients so you can easily fold the tortilla. Too much filling and it will spill out.
- Warm the tortilla. Place the tortillas in the microwave for a few seconds or lightly fry before adding the filling as warm tortillas are easier to fold.
- Slice the quesadilla. Place the cooked quesadillas on a cutting one at a time and cut into 3-4 wedges depending on the size of your tortillas.
