Equipment

Ingredients

  • 1 pound smoked sausage sliced ¼-inch thick
  • 1 pound petite yukon gold potatoes washed and quartered
  • 2 cups fresh green beans trimed
  • cup butter melted
  • 1 teaspoon black pepper
  • 1 teaspoon onion powder
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • ½ teaspoon chili powder
  • ½ teaspoon dried thyme
  • ½ teaspoon dried oregano

Instructions

  • Preheat oven to 425℉. Line a baking sheet with parchment paper and set aside.
  • Add sausage, potatoes, green beans, butter, black pepper, onion powder, garlic powder, paprika, chili powder, thyme, and oregano to a large bowl. Toss to coat.
  • Spread out on the prepared baking sheet in a single layer.
  • Bake for 25-30 minutes or until potatoes are tender.

Notes

  • Cut potatoes into evenly sized pieces so they roast at the same rate and come out perfectly tender.
  • Use a large sheet pan so the ingredients can spread out in a single layer; this helps everything crisp up instead of steaming.
  • Store leftovers in an airtight container in the fridge for up to 3 days. Reheat in the oven to help bring back the crisp texture.
  • Switch it up with other veggies like bell peppers or Brussels sprouts, just make sure to adjust sizes so everything roasts evenly.
