- 2 lbs petite Yukon gold (washed and quarted), or red potatoes
- 2 tablespoons olive oil
- 1 teaspoon salt
- 1 teaspoon black pepper
- 1 teaspoon paprika
- 1 teaspoon dried oregano
- 1 teaspoon dried thyme
- ½ teaspoon dried rosemary
- ½ teaspoon onion powder
Preheat oven to 425℉. Add the potatoes to a large mixing bowl.
