- 1 yellow cake mix
- ⅓ cup cooking oil
- 2 eggs
- 1 tsp banana extract
Banana Frosting
- 1 cup salted butter room temperature
- ¾ tsp banana extract
- ½ tsp vanilla extract
- 4-5 cup powdered sugar
- 1-3 tbsp milk depending on the thickness desired
Preheat oven to 350° F. Line two cookie sheets with parchment paper and set aside.
Add cake mix, oil, banana extract, and eggs to a medium size bowl. Mix until ingredients are well combined.
Scoop cookies onto the baking sheets using a 1½ inch cookie scoop. Leaving about two inches between each scoop.
Bake one sheet at a time for 10-12 minutes or until cookies are slightly golden brown around the edges.
Place the cookies on a cooling rack until completely cool.
Banana Frosting
Add butter and extracts into a mixing bowl. Mix the butter with the wire whisks of either a handheld mixer or a stand mixer until light and creamy. Slowly add in powdered sugar and mix until fluffy. Add milk until you get the desired thickness.
Using a piping bag with a round frosting tip, swirl the frosting onto the cooled cookies starting on the outside and moving into the center. Serve and enjoy!
