- 5 medium Roma tomatoes seeded and diced
- ½ medium red onion diced
- 1 medium red bell pepper
- 1 large avocado peeled, seeded, and diced
- 1 jalapeno seeded and finely diced
- 15 ounce can southwestern corn drained
- 15 ounce can black beans drained and rinsed
- ¼ cup cilantro chopped
- ⅓ cup cotija cheese grated
Add the tomatoes, onion, bell pepper, avocado, jalapeño, corn, beans, cilantro, and cotija cheese to a large bowl. Gently toss until evenly combined.
In a small bowl, whisk together the Italian dressing, black pepper, paprika, and Dijon mustard. Pour over the cowboy caviar and gently toss until evenly coated. Cover and refrigerate until ready to serve. Enjoy with tortilla chips or sliced baguette.
- Remove the tomato seeds and drain the beans and corn well to prevent excess liquid.
- Dice the vegetables into small, even pieces for the best texture.
- Toss gently to keep the avocado pieces from breaking down.
- Chill before serving to let the flavors blend.
