- 2 cups rotisserie or cooked chicken diced or shredded
- ¼ cup butter melted
- 3 cups low sodium chicken broth
- 1 cup sour cream
- 2 cups long grain rice
- 1 teaspoon dried rosemary
- 1 teaspoon black pepper
- 1 teaspoon paprika
- ½ teaspoon dried oregano
- ½ teaspoon dried thyme
- ½ teaspoon dried basil
- 2 cups mozzarella cheese
- 2 tablespoons fresh parsley for garnish
Preheat oven to 375°F and grease a 9x13 baking dish.
In a large bowl, whisk together butter, chicken broth, and sour cream. Then add rice, chicken, rosemary, black pepper, paprika, oregano, thyme, basil, and 1 cup of mozzarella cheese. Mix until well combined.
