Season the chicken with onion powder, garlic powder, black pepper, and paprika. Then, add olive oil and chicken in a large skillet over medium-high heat. Cook for 3-4 minutes on each side or until fully cooked.
While the chicken is cooking, add soy sauce, hoisin sauce, bourbon, water, brown sugar, ginger, garlic, and cornstarch to a medium bowl. Whisk until there are no lumps.
Remove chicken and let rest on a plate.
Lower heat to medium, add butter to the skillet and melt. Then, add bourbon sauce to melted butter. Cook for 2-3 minutes, occasionally stirring until the sauce thickens.
Slice the chicken and add to the sauce. Cook until warmed through.
Serve over rice and garish with green onions.
