CHEESEBURGER SOUP

INGREDIENTS

– 1 lb ground beef – 4 tbsp butter (divided 1 tbsp & 3 tbsp) – ¾ cup yellow onion (diced) – ¾ cup carrots (shredded) – ¾ cup celery (diced) – 2 tsp Italian seasoning – ½ tsp salt – 1 tsp ground black pepper – 2 lbs petite red potatoes (quartered) – 4 cups chicken broth – ¼ cup all-purpose flour – 1½ cups milk – 3 cups sharp cheddar cheese (shredded) – ⅓ cup sour cream

Over medium-high heat in a large stock pot. Add ground beef, cook and crumble until browned. Drain and set aside.

BROWN THE BEEF

In the same pot, add 1 tbsp of butter and  onions, carrots, celery, Italian seasoning, salt, and black pepper.  Saute until vegetables are tender.

SAUTE THE VEGGIES

Add beef, potatoes, and chicken broth to  the pot and bring to a boil. Reduce heat, cover, and simmer for 10-12  minutes or until potatoes are tender.

COMBINE EVERYTHING

In a small skillet over medium heat, add 3  tbsp butter and flour; cook and stir for 3-5 minutes or until bubbly.  Add to the soup and turn the heat to medium-high. Bring to a boil, then  reduce heat to low.
